Nice one Liam. As long as no copyright issues would be interested in the Apple, honey and chilli chutney idea !
Just to clear that up:
reproducing a written recipe in the preparation of a dish is not copyright infringement, a collection of ingredients can’t be covered under copyright.
I am writing a recipe here:
1kg (2 1/2 LB) cooking apples, peeled, cored, diced.
650g (1lb 4oz) light muscovado sugar
6 TBSP blended clear honey
500g (1lb 2oz) raisins or sultanas
3 onions chopped
2 TSP mustard seeds
2 TSP ground ginger
1 TSP sea salt
2 red chillies seeded finely chopped
700ml cider vinegar
Put everything in a large stainless steel saucepan, mix well.
Cook over a medium heat and bring to a boil. The simmer for 1 1/2 - 2 hours. Stir occasionally.
It should become thick and all liquid should have absorbed. Keep an eye on it for the last half hour to avoid burning and sticking. It’s done when you can draw a wooden spoon across the pan and it leaves a line.
Sterilise your jars, it makes about 1000g so two 1lb jars should do it. I prefer to do smaller jars tho.
Spoon the chutney into the jars while still hot and seal.
I would leave them at-least two weeks before tasting.
